Ingredients

  • 1 1/2 cups semolina
  • 1 cup desiccated coconut
  • 1 cup sugar
  • 1 cup plain yogurt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/4 cup blanched almonds, for garnish
  • 1/4 cup pistachios, for garnish

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a 9x13 inch baking dish.
  2. In a large bowl, mix together the semolina, desiccated coconut, sugar, yogurt, melted butter, and baking powder until well combined.
  3. Transfer the mixture to the prepared baking dish and smooth the top with a spatula.
  4. Using a sharp knife, cut the basbousa into diamond or square shapes.
  5. Place an almond or pistachio in the center of each piece.
  6. Bake in the preheated oven for 25-30 minutes, or until the basbousa is golden brown.
  7. While the basbousa is baking, prepare the rosewater syrup.
  8. Remove the basbousa from the oven and immediately pour the syrup over the hot cake.
  9. Allow the basbousa to cool and absorb the syrup before serving.
