Ingredients

  • 500g beef, cut into cubes
  • 4 potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 tomatoes, chopped
  • 2 tbsp vegetable oil
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the curry powder, cumin, and turmeric, and cook for 2 minutes.
  5. Add the potatoes, bell pepper, and tomatoes to the pot.
  6. Pour in the beef broth and season with salt and pepper.
  7. Cover and simmer for 45-50 minutes, or until the beef and potatoes are tender.
  8. Garnish with fresh cilantro before serving.
