Ingredients

  • 500g lamb, cut into cubes
  • 2 cups buckwheat
  • 1 large onion, finely chopped
  • 3 carrots, grated
  • 4 cups beef or vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 3 tbsp vegetable oil

Instructions

  1. Heat 2 tbsp of vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the cubed lamb and cook until browned on all sides.
  4. Stir in the grated carrots, cumin, and paprika. Cook for 5 minutes.
  5. Add the buckwheat and stir to combine with the other ingredients.
  6. Pour in the broth, season with salt and pepper, and bring to a boil.
  7. Reduce the heat, cover the pot, and simmer for 20-25 minutes until the buckwheat is tender and the liquid is absorbed.
  8. Fluff the pilaf with a fork before serving.
