Ingredients
- 500g lamb, cut into cubes
- 2 cups buckwheat
- 1 large onion, finely chopped
- 3 carrots, grated
- 4 cups beef or vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 3 tbsp vegetable oil
Instructions
- Heat 2 tbsp of vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent.
- Add the cubed lamb and cook until browned on all sides.
- Stir in the grated carrots, cumin, and paprika. Cook for 5 minutes.
- Add the buckwheat and stir to combine with the other ingredients.
- Pour in the broth, season with salt and pepper, and bring to a boil.
- Reduce the heat, cover the pot, and simmer for 20-25 minutes until the buckwheat is tender and the liquid is absorbed.
- Fluff the pilaf with a fork before serving.
