Ingredients

  • 2 cups buckwheat
  • 4 cups water
  • 1 large eggplant, diced
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • Juice of 1 lemon

Instructions

  1. Rinse the buckwheat under cold water and drain.
  2. In a pot, bring 4 cups of water to a boil. Add the buckwheat, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
  3. Preheat the oven to 400°F (200°C).
  4. Place the diced eggplant, sliced bell peppers, and sliced red onion on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
