Ingredients
- 2 cups buckwheat
- 4 cups water
- 1 large eggplant, diced
- 2 bell peppers, sliced
- 1 red onion, sliced
- 3 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- Juice of 1 lemon
Instructions
- Rinse the buckwheat under cold water and drain.
- In a pot, bring 4 cups of water to a boil. Add the buckwheat, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
- Preheat the oven to 400°F (200°C).
- Place the diced eggplant, sliced bell peppers, and sliced red onion on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
- Roast the vegetables in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized.
- In a large bowl, combine the cooked buckwheat, roasted vegetables, chopped parsley, chopped dill, and lemon juice. Toss to mix well.
- Adjust the seasoning with salt and pepper if needed.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
