Ingredients

  • 1.5 lbs (700g) lamb, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons (30ml) lemon juice
  • 1 teaspoon (5g) ground cumin
  • 1 teaspoon (5g) paprika
  • 1/2 teaspoon (2g) black pepper
  • 1/2 teaspoon (2g) salt
  • 1 cup (240g) plain yogurt
  • 2 tablespoons (30g) fresh mint, chopped
  • 1 tablespoon (15ml) lemon juice
  • Salt to taste

Instructions

  1. In a large bowl, combine the lamb, onion, garlic, olive oil, lemon juice, cumin, paprika, black pepper, and salt. Mix well to coat the lamb evenly. Cover and refrigerate for at least 2 hours, or overnight for best results.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated lamb onto skewers, leaving a little space between each piece.
  4. Grill the kebabs for 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
