Ingredients
- 1.5 lbs (700g) lamb, cut into 1-inch cubes
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup (60ml) olive oil
- 2 tablespoons (30ml) lemon juice
- 1 teaspoon (5g) ground cumin
- 1 teaspoon (5g) paprika
- 1/2 teaspoon (2g) black pepper
- 1/2 teaspoon (2g) salt
- 1 cup (240g) plain yogurt
- 2 tablespoons (30g) fresh mint, chopped
- 1 tablespoon (15ml) lemon juice
- Salt to taste
Instructions
- In a large bowl, combine the lamb, onion, garlic, olive oil, lemon juice, cumin, paprika, black pepper, and salt. Mix well to coat the lamb evenly. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb onto skewers, leaving a little space between each piece.
- Grill the kebabs for 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- While the kebabs are grilling, prepare the mint yogurt sauce. In a small bowl, mix together the plain yogurt, fresh mint, and lemon juice. Season with salt to taste.
- Serve the lamb kebabs hot off the grill with the mint yogurt sauce on the side.
