Bashkir-Style Chicken Kebabs (Башкирские куриные шашлыки)

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) plain yogurt
  • 2 tablespoons vegetable oil
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. In a large bowl, combine the chopped onion, minced garlic, yogurt, vegetable oil, paprika, cumin, coriander, cayenne pepper, salt, and black pepper. Mix well to form a marinade.
  2. Add the chicken cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto skewers, leaving a little space between each piece.
  4. Grill the chicken kebabs for about 12-15 minutes, turning occasionally, until they are cooked through and have a nice charred exterior.
  5. Remove the kebabs from the grill and let them rest for a few minutes. Garnish with fresh cilantro leaves before serving.
