Ingredients

  • 1 lb (450g) mushrooms, cleaned and quartered
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup (240ml) water
  • 1 cup (240ml) white vinegar
  • 1/4 cup (60ml) vegetable oil
  • 2 bay leaves
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp black peppercorns

Instructions

  1. In a large pot, combine water, vinegar, vegetable oil, bay leaves, salt, sugar, and black peppercorns. Bring to a boil.
  2. Add the mushrooms, onion, and garlic to the pot. Reduce heat and simmer for 10-12 minutes, until the mushrooms are tender.
  3. Remove the pot from the heat and let the mushrooms cool to room temperature.
  4. Transfer the mushrooms and liquid to a clean, airtight container and refrigerate for at least 24 hours before serving.
