Ingredients
- 1 lb (450g) mushrooms, cleaned and quartered
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup (240ml) water
- 1 cup (240ml) white vinegar
- 1/4 cup (60ml) vegetable oil
- 2 bay leaves
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp black peppercorns
Instructions
- In a large pot, combine water, vinegar, vegetable oil, bay leaves, salt, sugar, and black peppercorns. Bring to a boil.
- Add the mushrooms, onion, and garlic to the pot. Reduce heat and simmer for 10-12 minutes, until the mushrooms are tender.
- Remove the pot from the heat and let the mushrooms cool to room temperature.
- Transfer the mushrooms and liquid to a clean, airtight container and refrigerate for at least 24 hours before serving.
