Bashkir-Style Stuffed Eggplant (Башкирские фаршированные баклажаны)
Башкирские фаршированные баклажаны, or Bashkir-Style Stuffed Eggplant, is a traditional dish from the Bashkir cuisine that features tender eggplants stuffed with a flavorful mixture of meat, rice, and aromatic spices.
Ingredients
- 2 large eggplants
- 1/2 lb ground beef
- 1/2 cup rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/4-inch thick shell. Chop the scooped-out flesh and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
- Stir in the chopped eggplant flesh, rice, tomato, parsley, cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Stuff the eggplant shells with the meat and rice mixture.
- Place the stuffed eggplants in a baking dish and cover with foil. Bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the eggplants are tender.
- Serve the Bashkir-Style Stuffed Eggplant hot, garnished with additional parsley if desired.
