Ingredients

  • 2 large eggplants
  • 1/2 lb ground beef
  • 1/2 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/4-inch thick shell. Chop the scooped-out flesh and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
  5. Stir in the chopped eggplant flesh, rice, tomato, parsley, cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  6. Stuff the eggplant shells with the meat and rice mixture.
  7. Place the stuffed eggplants in a baking dish and cover with foil. Bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the eggplants are tender.
  9. Serve the Bashkir-Style Stuffed Eggplant hot, garnished with additional parsley if desired.
