Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 1/2 cup corn kernels
  • 1/2 cup peas
  • 1/2 cup grated cheese
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Cut the tops off the tomatoes and scoop out the pulp. Sprinkle the insides with salt and let them drain upside down on a paper towel.
  2. In a skillet, heat the vegetable oil and sauté the onion and bell pepper until softened.
  3. Add the corn, peas, and cooked rice to the skillet. Season with salt and pepper, and cook for 5 minutes.
  4. Preheat the oven to 350°F (175°C).
  5. Stuff the tomatoes with the vegetable and rice mixture, then top with grated cheese.
  6. Bake for 20 minutes or until the tomatoes are tender and the cheese is melted and golden brown.
  7. Serve the stuffed tomatoes hot and enjoy!
