Ingredients
- 4 large tomatoes
- 1 cup cooked rice
- 1 onion, finely chopped
- 1 bell pepper, diced
- 1/2 cup corn kernels
- 1/2 cup peas
- 1/2 cup grated cheese
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Cut the tops off the tomatoes and scoop out the pulp. Sprinkle the insides with salt and let them drain upside down on a paper towel.
- In a skillet, heat the vegetable oil and sauté the onion and bell pepper until softened.
- Add the corn, peas, and cooked rice to the skillet. Season with salt and pepper, and cook for 5 minutes.
- Preheat the oven to 350°F (175°C).
- Stuff the tomatoes with the vegetable and rice mixture, then top with grated cheese.
- Bake for 20 minutes or until the tomatoes are tender and the cheese is melted and golden brown.
- Serve the stuffed tomatoes hot and enjoy!
