Ingredients

  • 1 lb dried fava beans
  • 4 oz pancetta, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Extra virgin olive oil

Instructions

  1. Soak the dried fava beans in water overnight.
  2. In a large pot, sauté the pancetta, onion, and garlic in olive oil until the pancetta is crispy and the onion is translucent.
