Ingredients
- 4 large bell peppers
- 1 cup cooked lentils
- 1/2 lb Basilicatan sausage, casing removed

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the sausage, breaking it up with a spoon, until browned.
- Add the onion and garlic to the skillet and cook until softened.
- Stir in the cooked lentils, pecorino cheese, breadcrumbs, and parsley. Season with salt and pepper.
- Stuff the bell peppers with the sausage and lentil mixture.
- Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is golden brown.
