Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the sausage, breaking it up with a spoon, until browned.
  4. Add the onion and garlic to the skillet and cook until softened.
  5. Stir in the cooked lentils, pecorino cheese, breadcrumbs, and parsley. Season with salt and pepper.
  6. Stuff the bell peppers with the sausage and lentil mixture.
  7. Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
  8. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is golden brown.
