Basotho Chicken Potjie

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 cup green beans
  • 2 cups chicken broth
  • 2 teaspoons curry powder
  • 1 teaspoon paprika

Instructions

  1. Heat a large pot or Dutch oven over medium heat.

  7. Cover and simmer for 1 hour, or until the chicken is cooked through and the vegetables are tender.
