Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 3 potatoes, peeled and cubed
- 2 carrots, sliced
- 1 cup green beans
- 2 cups chicken broth
- 2 teaspoons curry powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat a large pot or Dutch oven over medium heat.
- Add the chicken pieces and brown on all sides. Remove and set aside.
- In the same pot, sauté the onions until translucent.
- Add the tomatoes, potatoes, carrots, and green beans. Stir to combine.
- Return the chicken pieces to the pot.
- Pour in the chicken broth and sprinkle with curry powder, paprika, salt, and pepper.
- Cover and simmer for 1 hour, or until the chicken is cooked through and the vegetables are tender.
