Basotho Lamb Curry (Lits'uoa)
Lits'uoa is a traditional Basotho lamb curry that is rich in flavor and spices. It is a popular dish in Lesotho and is often served with rice or bread.
Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 thumb-sized piece of ginger, grated
- 2 tomatoes, chopped
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 2 cups beef or vegetable broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the lamb cubes and brown them on all sides.
- Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper, and cook for 2 minutes.
- Add the chopped tomatoes and cook for another 5 minutes.
- Pour in the broth, season with salt and pepper, and bring to a simmer.
- Cover the pot and let the curry simmer for 1 hour, stirring occasionally.
- Once the lamb is tender and the sauce has thickened, the curry is ready to serve.
