Lits'uoa is a traditional Basotho lamb curry that is rich in flavor and spices. It is a popular dish in Lesotho and is often served with rice or bread.

Basotho Lamb Curry (Lits'uoa)

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 2 cups beef or vegetable broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  3. Add the lamb cubes and brown them on all sides.
  4. Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper, and cook for 2 minutes.
  5. Add the chopped tomatoes and cook for another 5 minutes.
  6. Pour in the broth, season with salt and pepper, and bring to a simmer.
  7. Cover the pot and let the curry simmer for 1 hour, stirring occasionally.
  8. Once the lamb is tender and the sauce has thickened, the curry is ready to serve.
