Basotho-style Chicken And Spinach Lasagna

Ingredients
- 6 boneless, skinless chicken thighs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 10 ounces fresh spinach, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated mozzarella cheese
- 1 cup grated cheddar cheese
- 12 lasagna noodles, cooked al dente
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Cook until softened, about 3 minutes.
- Add the chopped spinach to the skillet and cook until wilted.
- Pour in the chicken broth and heavy cream. Bring to a simmer and cook for 5 minutes.
- Remove the skillet from the heat and stir in half of the grated mozzarella and cheddar cheeses.
- Assemble the lasagna by layering the cooked lasagna noodles, chicken, and spinach mixture in a 9x13-inch baking dish. Repeat the layers, ending with a layer of cheese on top.
- Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
- Let the lasagna rest for 10 minutes before slicing and serving.
