Basotho-style Chicken And Spinach Lasagna

Ingredients

  • 6 boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 10 ounces fresh spinach, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated mozzarella cheese
  • 1 cup grated cheddar cheese
  • 12 lasagna noodles, cooked al dente

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and garlic. Cook until softened, about 3 minutes.
  5. Add the chopped spinach to the skillet and cook until wilted.
  6. Pour in the chicken broth and heavy cream. Bring to a simmer and cook for 5 minutes.
  7. Remove the skillet from the heat and stir in half of the grated mozzarella and cheddar cheeses.
  8. Assemble the lasagna by layering the cooked lasagna noodles, chicken, and spinach mixture in a 9x13-inch baking dish. Repeat the layers, ending with a layer of cheese on top.
  9. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
  10. Let the lasagna rest for 10 minutes before slicing and serving.
