Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

  • 3/4 cup granulated sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup matcha green tea powder
  • 1/2 cup milk
  • 1/2 cup cherry jam
  • 1 egg yolk (for egg wash)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate bowl, cream the butter and sugar until light and fluffy. Add the egg yolks and vanilla extract, and mix until well combined.
  4. Gradually add the flour mixture to the wet ingredients, alternating with the milk, and mix until a smooth dough forms.
  5. Divide the dough in half. Mix the matcha green tea powder into one half of the dough until well combined.
  6. Press the plain dough into the bottom of the prepared cake pan. Spread the cherry jam over the dough, leaving a small border around the edge.
  7. Roll out the matcha dough between two sheets of parchment paper to fit the size of the cake pan. Carefully place the matcha dough on top of the cherry jam layer.
  8. Trim any excess dough and crimp the edges to seal the cake.
  9. Brush the top of the cake with the egg yolk wash.
  10. Bake for 35-40 minutes, or until the cake is golden brown.
  11. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
