Ingredients
- 1 lb fresh prawns, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 1 lb clams, scrubbed
- 1 lb squid, cleaned and sliced into rings
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup crushed tomatoes
- 1/2 cup white wine
- 1/4 cup olive oil
- 2 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or paella pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the diced bell peppers and continue to cook until they are tender.
- Sprinkle the paprika over the vegetables, then pour in the crushed tomatoes and white wine. Stir to combine.
- Add the prawns, mussels, clams, and squid to the pot. Season with salt and pepper, then cover and simmer for about 15-20 minutes, or until the seafood is cooked through and the shells have opened.
- Once the seafood is cooked, remove from heat and garnish with chopped parsley.
- Serve the Basque-style Seafood Feast hot, accompanied by crusty bread or over a bed of saffron-infused rice.
