Ingredients

  • 4 cups whole milk
  • 1 cup heavy cream
  • 1 cup sugar
  • 1/2 teaspoon saffron threads
  • 1 tablespoon rosewater
  • 1/4 cup pistachios, chopped (for garnish)

Instructions

  1. In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot but not boiling.
  2. Remove a small amount of the hot milk mixture and dissolve the saffron threads in it. Add the saffron mixture back into the saucepan and stir well.
  3. Continue to heat the mixture for another 5 minutes, stirring constantly. Remove from heat and let it cool to room temperature.
  4. Stir in the rosewater and pour the mixture into a shallow dish. Cover and place in the freezer.
  5. Every 30 minutes, remove the dish from the freezer and stir the mixture with a fork to break up any ice crystals. Repeat this process 4-5 times, or until the ice cream is thick and creamy.
  6. Once the ice cream is ready, scoop it into bowls and garnish with chopped pistachios.
