Bastani (persian Saffron And Rosewater Ice Cream)
Bastani is a traditional Persian ice cream flavored with saffron and rosewater, creating a unique and aromatic dessert that is perfect for hot summer days.
Ingredients
- 4 cups whole milk
- 1 cup heavy cream
- 1 cup sugar
- 1/2 teaspoon saffron threads
- 1 tablespoon rosewater
- 1/4 cup pistachios, chopped (for garnish)
Instructions
- In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot but not boiling.
- Remove a small amount of the hot milk mixture and dissolve the saffron threads in it. Add the saffron mixture back into the saucepan and stir well.
- Continue to heat the mixture for another 5 minutes, stirring constantly. Remove from heat and let it cool to room temperature.
- Stir in the rosewater and pour the mixture into a shallow dish. Cover and place in the freezer.
- Every 30 minutes, remove the dish from the freezer and stir the mixture with a fork to break up any ice crystals. Repeat this process 4-5 times, or until the ice cream is thick and creamy.
- Once the ice cream is ready, scoop it into bowls and garnish with chopped pistachios.
