Bata Beef Stew With Plantains

Ingredients

  • 1.5 lbs beef stew meat, cut into chunks
  • 2 ripe plantains, peeled and sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 tomatoes, chopped
  • 2 cups beef broth
  • 1 cup tomato sauce
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Season the beef with salt, pepper, paprika, and cumin.
  2. Heat the vegetable oil in a large pot over medium heat. Add the beef and brown on all sides. Remove the beef and set aside.
  3. In the same pot, add the onions, garlic, and red bell pepper. Cook until softened.
  4. Stir in the tomatoes, tomato sauce, and beef broth. Add the beef back to the pot.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 hours, or until the beef is tender.
  6. Add the sliced plantains to the stew and continue to simmer for another 20-30 minutes, until the plantains are soft and the stew has thickened.
  7. Adjust the seasoning with salt and pepper, if needed.
