Bata Beef Stew With Plantains

Ingredients
- 1.5 lbs beef stew meat, cut into chunks
- 2 ripe plantains, peeled and sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 2 tomatoes, chopped
- 2 cups beef broth
- 1 cup tomato sauce
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Season the beef with salt, pepper, paprika, and cumin.
- Heat the vegetable oil in a large pot over medium heat. Add the beef and brown on all sides. Remove the beef and set aside.
- In the same pot, add the onions, garlic, and red bell pepper. Cook until softened.
- Stir in the tomatoes, tomato sauce, and beef broth. Add the beef back to the pot.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 hours, or until the beef is tender.
- Add the sliced plantains to the stew and continue to simmer for another 20-30 minutes, until the plantains are soft and the stew has thickened.
- Adjust the seasoning with salt and pepper, if needed.
