Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red chili, finely chopped
- 1 can (14 oz) coconut milk
- 2 tablespoons vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and red chili. Sauté for 3-4 minutes until the onion is soft and translucent.
- Add the diced sweet potatoes to the pot and stir to combine with the onion mixture.
- Pour in the coconut milk and add the ground cumin, coriander, turmeric, salt, and pepper. Stir well to combine all the ingredients.
- Bring the curry to a gentle simmer, then reduce the heat to low. Cover the pot and let it cook for 30-35 minutes, or until the sweet potatoes are tender.
- Once the sweet potatoes are cooked, taste the curry and adjust the seasoning if needed.
