Ingredients

  • 2 large sweet potatoes, peeled and diced

  • 1 red chili, finely chopped
  • 1 can (14 oz) coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and red chili. Sauté for 3-4 minutes until the onion is soft and translucent.
  2. Add the diced sweet potatoes to the pot and stir to combine with the onion mixture.
