Batata Harra is a traditional Assyrian stew made with chickpeas and potatoes, cooked in a flavorful blend of spices and herbs. This hearty and comforting dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 4 potatoes, peeled and diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup vegetable broth
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, paprika, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
- Add the diced potatoes and chickpeas to the pot. Pour in the vegetable broth and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the potatoes are tender.
- Once the stew is ready, taste and adjust the seasoning if needed. Serve hot, garnished with chopped fresh parsley.
