Batata Vada (बटाटा वडा)

Ingredients

  • 3 large potatoes, boiled and mashed
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2-3 green chilies, finely chopped
  • 1 inch ginger, grated
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/4 cup cilantro, chopped
  • Salt to taste
  • 1 1/2 cups gram flour (besan)
  • 1/2 tsp baking soda
  • Oil for deep frying

Instructions

  1. Heat 2 tbsp oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add green chilies and ginger.
  2. Add the mashed potatoes, turmeric powder, red chili powder, garam masala, cilantro, and salt. Mix well and cook for 2-3 minutes. Remove from heat and let it cool.
  3. In a bowl, mix gram flour, salt, and baking soda. Add water gradually to make a smooth, thick batter.
  4. Divide the potato mixture into equal portions and shape them into balls. Heat oil in a pan for deep frying.
  5. Dip each potato ball into the gram flour batter, making sure it is evenly coated, and carefully drop it into the hot oil. Fry until golden brown and crispy.
  6. Remove the vadas from the oil and place them on a paper towel to drain excess oil.
