Bavarian Cherry Cheesecake (Bayrischer Kirsch-Käsekuchen)

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, then stir in the vanilla extract and flour. Pour the filling over the crust.
  4. Bake for 45 minutes, or until the center is set. Allow the cheesecake to cool, then refrigerate for at least 4 hours, or overnight.
  5. Before serving, spread the cherry pie filling over the top of the cheesecake.
