Bayrische Brezelhappen (bavarian Pretzel Bites)

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water
  • 1 tablespoon granulated sugar
  • 4 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 1/4 cup baking soda
  • Coarse salt, for topping

Instructions

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5 minutes until it becomes foamy.
  2. In a large mixing bowl, combine the flour and melted butter. Pour in the yeast mixture and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes, then place it in a greased bowl and cover with a clean towel. Let it rise for 1 hour.
  4. Preheat the oven to 450°F (230°C) and bring a large pot of water to a boil. Stir in the baking soda.
  5. Divide the dough into small pieces and roll them into ropes. Cut the ropes into bite-sized pieces.
