Bayrische Cremetorte (bavarian Cream Tart)

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • Fresh fruit or fruit glaze for topping

Instructions

  1. In a food processor, pulse together the flour, sugar, and salt. Add the cold butter and vanilla extract, then pulse until the mixture resembles coarse crumbs. Press the dough into a tart pan and chill for 30 minutes.
  2. Preheat the oven to 375°F (190°C). Bake the tart crust for 15-20 minutes, or until golden brown. Let it cool completely.
  3. In a saucepan, heat the milk until steaming. In a bowl, whisk together the sugar, cornstarch, and egg yolks. Gradually whisk the hot milk into the egg mixture, then return the mixture to the saucepan. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the vanilla extract.
