Ingredients
- 1 pound dried white beans, soaked overnight
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon paprika
- Salt and pepper to taste
- 6 cups vegetable broth
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are softened.
- Add the garlic, paprika, and bay leaf, and cook for another minute.
- Drain the soaked beans and add them to the pot. Pour in the vegetable broth and bring the soup to a boil.
