Bean Soup (ciorbă De Fasole)

Ingredients

  • 1 pound dried white beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 6 cups vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are softened.
  2. Add the garlic, paprika, and bay leaf, and cook for another minute.
  3. Drain the soaked beans and add them to the pot. Pour in the vegetable broth and bring the soup to a boil.
