Ingredients
- 2 cups of black-eyed beans
- 1 onion, chopped

Instructions
- Wash the beans and place them in a pot with enough water to cover. Bring to a boil and then reduce the heat to simmer until the beans are soft, about 45 minutes.
- Once the beans are soft, use a blender or food processor to puree them until smooth.
- In a separate pot, heat the palm oil and sauté the chopped onions and scotch bonnet peppers until fragrant.
- Add the pureed beans to the pot and stir to combine with the onions and peppers.
- Pour in the chicken or vegetable broth and stir well. Let the soup simmer for 10-15 minutes, stirring occasionally.
- Season with salt to taste and serve hot.
