Bean Soup (Sopa de Frijoles) is a classic dish in Venezuelan cuisine, known for its rich and comforting flavors. This hearty soup is perfect for a cozy family meal or to warm up on a chilly day.
Ingredients
- 2 cups dried black beans
- 8 cups water
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the black beans and soak them in water overnight.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Add the soaked black beans, water, tomatoes, cumin, paprika, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 1 hour, or until the beans are tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier soup, you can skip this step.
- Adjust the seasoning if needed and serve hot.
