Bean Soup (sopa De Frijoles)

Ingredients

  • 2 cups dried black beans
  • 8 cups water
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the black beans and soak them in water overnight.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Cook until the vegetables are softened.
  3. Add the soaked black beans, water, tomatoes, cumin, paprika, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for 1 hour, or until the beans are tender.
  4. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier soup, you can skip this step.
  5. Adjust the seasoning if needed and serve hot.
