Bean Stew (savorous Ibiharage)

Ingredients

  • 2 cups dried red kidney beans
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 4 cups water

Instructions

  1. Rinse the dried red kidney beans and soak them in water overnight.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and green bell pepper. Cook until the vegetables are softened.
  3. Add the diced tomatoes, salt, paprika, and cayenne pepper to the pot. Cook for 5 minutes, stirring occasionally.
  4. Drain the soaked beans and add them to the pot. Pour in the water and bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and let the stew simmer for 1 hour or until the beans are tender.
  6. Adjust the seasoning if needed and serve the bean stew hot.
