Bean Stew (savorous Ibiharage)
Bean Stew, known as Savorous Ibiharage, is a traditional dish from Burundian Cuisine that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 2 cups dried red kidney beans
- 1 onion, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 4 cups water
Instructions
- Rinse the dried red kidney beans and soak them in water overnight.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and green bell pepper. Cook until the vegetables are softened.
- Add the diced tomatoes, salt, paprika, and cayenne pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Drain the soaked beans and add them to the pot. Pour in the water and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let the stew simmer for 1 hour or until the beans are tender.
- Adjust the seasoning if needed and serve the bean stew hot.
