Ingredients
- 2 pork knuckles
- 500g dried white beans
- 2 onions, chopped
- 3 carrots, diced
- 3 celery stalks, chopped
- 4 garlic cloves, minced
- 2 bay leaves
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Soak the dried white beans in water overnight.
- In a large pot, place the pork knuckles and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour.
- Add the soaked beans, onions, carrots, celery, garlic, bay leaves, and paprika to the pot with the pork knuckles. Season with salt and pepper.
- Cover and simmer for an additional 1 hour, or until the beans are tender and the pork is cooked through.
- Remove the pork knuckles from the pot, shred the meat, and return it to the stew.
- Adjust the seasoning if needed and serve the bean stew hot, garnished with fresh parsley.
