Ingredients

  • 1 lb dried white beans
  • 4 botifarra sausages
  • 1 onion, chopped

  • 2 tomatoes, diced
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Water

Instructions

  1. Soak the dried white beans in water overnight.
  2. In a large pot, sauté the chopped onion and minced garlic until softened.
  3. Add the diced tomatoes, bay leaves, paprika, and soaked white beans to the pot.
  4. Add enough water to cover the beans and bring to a boil.
  5. Reduce the heat, cover, and simmer for 45 minutes to 1 hour, or until the beans are tender.
  6. While the beans are cooking, grill or pan-fry the botifarra sausages until browned and cooked through.
  7. Slice the cooked sausages and add them to the pot of beans.
  8. Season with salt and pepper to taste.
  9. Serve the beans with sausage hot, garnished with fresh parsley if desired.
