Ingredients
- 1 whole duck, cut into pieces
- 5 shallots
- 4 cloves garlic
- 3 red chilies
- 1 inch ginger
- 1 inch galangal
- 1 lemongrass stalk
- 2 bay leaves
- 1 tsp tamarind paste
- 1 tsp palm sugar
- 1/2 cup coconut milk
- 2 cups water
- Salt to taste
Instructions
- Grind shallots, garlic, red chilies, ginger, and galangal into a smooth paste.
- Heat oil in a large pot and sauté the spice paste until fragrant.
- Add the duck pieces and cook until they change color.
- Add lemongrass, bay leaves, tamarind paste, palm sugar, and water. Simmer until the duck is tender.
- Pour in the coconut milk and simmer for another 15 minutes.
- Season with salt to taste and serve hot.
