Ingredients

  • 1 whole duck, cut into pieces
  • 5 shallots
  • 4 cloves garlic
  • 3 red chilies
  • 1 inch ginger
  • 1 inch galangal
  • 1 lemongrass stalk
  • 2 bay leaves
  • 1 tsp tamarind paste
  • 1 tsp palm sugar
  • 1/2 cup coconut milk
  • 2 cups water
  • Salt to taste

Instructions

  1. Grind shallots, garlic, red chilies, ginger, and galangal into a smooth paste.
  2. Heat oil in a large pot and sauté the spice paste until fragrant.
  3. Add the duck pieces and cook until they change color.
  4. Add lemongrass, bay leaves, tamarind paste, palm sugar, and water. Simmer until the duck is tender.
  5. Pour in the coconut milk and simmer for another 15 minutes.
  6. Season with salt to taste and serve hot.
