Beef And Guinness Stew Perfection

Ingredients
- 2 lbs stewing beef, cubed
- 3 tbsp all-purpose flour
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can (14.9 oz) Guinness beer
- 2 cups beef broth
- 2 tbsp tomato paste
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large bowl, toss the beef cubes with the flour until evenly coated.
- Heat the vegetable oil in a large pot over medium-high heat. Add the beef in batches and cook until browned on all sides. Remove the beef and set aside.
- Add the chopped onion to the pot and cook until softened. Add the garlic, carrots, and celery, and cook for a few minutes.
- Pour in the Guinness beer and stir, scraping up any browned bits from the bottom of the pot. Add the beef back to the pot.
- Pour in the beef broth and add the tomato paste and bay leaves. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Discard the bay leaves and adjust the seasoning if needed before serving.
