Ingredients

  • 2 lbs stewing beef, cubed
  • 3 tbsp all-purpose flour
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14.9 oz) Guinness beer
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large bowl, toss the beef cubes with the flour until evenly coated.
  2. Heat the vegetable oil in a large pot over medium-high heat. Add the beef in batches and cook until browned on all sides. Remove the beef and set aside.
  3. Add the chopped onion to the pot and cook until softened. Add the garlic, carrots, and celery, and cook for a few minutes.
  4. Pour in the Guinness beer and stir, scraping up any browned bits from the bottom of the pot. Add the beef back to the pot.
  5. Pour in the beef broth and add the tomato paste and bay leaves. Season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Discard the bay leaves and adjust the seasoning if needed before serving.
