Beef and Peanut Stew (Mafé)
Mafé is a delicious and hearty beef and peanut stew that originates from Central African cuisine. This comforting dish is packed with rich flavors and is perfect for a cozy family meal or special gatherings.
Ingredients
- 2 lbs beef stew meat, cut into chunks
- 1 cup peanut butter
- 2 onions, chopped
- 3 tomatoes, diced
- 4 cups beef broth
- 1 cup tomato sauce
- 1/2 cup chopped carrots
- 1/2 cup chopped green beans
- 1/2 cup chopped cabbage
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until they are soft and translucent.
- Add the beef stew meat to the pot and brown on all sides.
- Stir in the peanut butter, tomatoes, tomato sauce, and beef broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1.5 hours, stirring occasionally.
- Add the chopped carrots, green beans, and cabbage to the pot. Continue to simmer for an additional 30 minutes, or until the vegetables are tender and the meat is cooked through.
- Season the mafé with salt and pepper to taste. Serve the stew hot over cooked rice or couscous.
