Beef and Potato Stew (Tocăniță de Vita cu Cartofi)

Ingredients

  • 1 kg beef, cubed
  • 4 large potatoes, peeled and cubed
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 500 ml beef broth

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the tomato paste, paprika, thyme, bay leaves, salt, and pepper.
  5. Pour in the beef broth and bring to a simmer.
  6. Cover and cook for 1 hour, stirring occasionally.
  7. Add the cubed potatoes and continue to cook for another 30-40 minutes until the beef and potatoes are tender.
  8. Adjust the seasoning if needed and serve hot.
