Beef and Potato Stew (Tocăniță de Vita cu Cartofi)
Tocăniță de Vita cu Cartofi is a traditional Romanian beef and potato stew that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1 kg beef, cubed
- 4 large potatoes, peeled and cubed
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 500 ml beef broth
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions and garlic, and cook until softened.
- Add the beef cubes and brown on all sides.
- Stir in the tomato paste, paprika, thyme, bay leaves, salt, and pepper.
- Pour in the beef broth and bring to a simmer.
- Cover and cook for 1 hour, stirring occasionally.
- Add the cubed potatoes and continue to cook for another 30-40 minutes until the beef and potatoes are tender.
- Adjust the seasoning if needed and serve hot.
