Ingredients

  • 500g beef, diced
  • 200g Stilton cheese, crumbled
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 tbsp flour
  • 500ml beef stock
  • 1 tbsp Worcestershire sauce
  • 2 sheets of puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large pan, brown the beef over medium heat.
  2. Add the onion and garlic, and cook until softened.
  3. Stir in the carrot and celery, then sprinkle the flour over the mixture and stir well.
  4. Pour in the beef stock and Worcestershire sauce, then bring to a simmer and cook for 15 minutes until thickened.
  5. Remove from heat and stir in the Stilton cheese until melted.
  6. Preheat the oven to 200°C (400°F).
  7. Line a pie dish with one sheet of puff pastry, then pour in the beef and Stilton mixture.
  8. Place the second sheet of puff pastry on top, crimp the edges to seal, and brush with the beaten egg.
  9. Make a few slits in the pastry to allow steam to escape, then bake for 30-35 minutes until golden brown.
