Ingredients
- 500g beef, cut into cubes
- 2 tablespoons curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 2 tomatoes, diced
- 1 eggplant, diced
- 2 carrots, sliced
- 1 bell pepper, sliced
- 400ml coconut milk
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the beef cubes to the pot and cook until browned on all sides.
- Stir in the curry powder, tomatoes, and coconut milk. Season with salt and pepper, then bring to a simmer.
- Add the eggplant, carrots, and bell pepper to the pot, and simmer for 30-40 minutes, or until the beef is tender and the vegetables are cooked.
- Adjust the seasoning if needed, then serve the bœuf au curry avec légumes hot with steamed rice or crusty bread.
