Ingredients

  • 500g beef, cut into cubes
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 tomatoes, diced
  • 1 eggplant, diced
  • 2 carrots, sliced
  • 1 bell pepper, sliced
  • 400ml coconut milk
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
  2. Add the beef cubes to the pot and cook until browned on all sides.
  3. Stir in the curry powder, tomatoes, and coconut milk. Season with salt and pepper, then bring to a simmer.
  4. Add the eggplant, carrots, and bell pepper to the pot, and simmer for 30-40 minutes, or until the beef is tender and the vegetables are cooked.
