Beef and Vegetable Stew (Ciorbă de Vacă cu Legume)
Ciorbă de Vacă cu Legume is a traditional Romanian beef and vegetable stew that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1.5 lbs beef chuck, cut into cubes
- 2 onions, chopped
- 3 carrots, sliced
- 2 parsnips, sliced
- 1 celery root, diced
- 1/2 cup long-grain rice
- 1/2 cup tomato paste
- 1 bay leaf
- 5 cups beef broth
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- In a large pot, brown the beef cubes over medium-high heat.
- Add the chopped onions, carrots, parsnips, and celery root to the pot and sauté until the vegetables start to soften.
- Stir in the tomato paste and cook for 2-3 minutes.
- Add the beef broth, bay leaf, and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 1.5 hours.
- Add the rice to the pot and continue to simmer for another 20-30 minutes, or until the rice is cooked and the meat is tender.
- Remove the bay leaf, adjust the seasoning if needed, and stir in the chopped parsley before serving.
