Ingredients

  • 1.5 lbs beef chuck, cut into cubes
  • 2 onions, chopped
  • 3 carrots, sliced
  • 2 parsnips, sliced
  • 1 celery root, diced
  • 1/2 cup long-grain rice
  • 1/2 cup tomato paste
  • 1 bay leaf
  • 5 cups beef broth
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot, brown the beef cubes over medium-high heat.
  2. Add the chopped onions, carrots, parsnips, and celery root to the pot and sauté until the vegetables start to soften.
  3. Stir in the tomato paste and cook for 2-3 minutes.
  4. Add the beef broth, bay leaf, and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 1.5 hours.
  5. Add the rice to the pot and continue to simmer for another 20-30 minutes, or until the rice is cooked and the meat is tender.
  6. Remove the bay leaf, adjust the seasoning if needed, and stir in the chopped parsley before serving.
