Beef Caldereta (kalderetang Baka)

Ingredients

  • 2 lbs beef, cut into cubes
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup tomato sauce
  • 1 cup beef broth
  • 1 cup liver spread
  • 2 large potatoes, cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 pieces dried bay leaves
  • 1 teaspoon paprika
  • 1 teaspoon chili flakes
  • Salt and pepper to taste
  • 3 tablespoons cooking oil

Instructions

  1. Heat oil in a large pot over medium heat. Sauté garlic and onions until fragrant.
  2. Add the beef cubes and cook until browned on all sides.
  3. Pour in the tomato sauce, beef broth, and liver spread. Stir to combine.
  4. Season with paprika, chili flakes, salt, and pepper. Add the bay leaves. Cover and simmer for 1.5 to 2 hours or until the beef is tender.
  5. Add the potatoes, carrots, and bell peppers. Cook for an additional 15-20 minutes or until the vegetables are tender.
  6. Adjust the seasoning if needed. Serve hot and enjoy with steamed rice.
