Beef Caldereta (kalderetang Baka)
Beef Caldereta, also known as Kalderetang Baka, is a rich and flavorful Filipino stew that is a staple in Kapampangan cuisine. This dish is made with tender beef, potatoes, carrots, and bell peppers simmered in a savory tomato-based sauce with a hint of heat from chili peppers.
Ingredients
- 2 lbs beef, cut into cubes
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 cup tomato sauce
- 1 cup beef broth
- 1 cup liver spread
- 2 large potatoes, cubed
- 2 carrots, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 pieces dried bay leaves
- 1 teaspoon paprika
- 1 teaspoon chili flakes
- Salt and pepper to taste
- 3 tablespoons cooking oil
Instructions
- Heat oil in a large pot over medium heat. Sauté garlic and onions until fragrant.
- Add the beef cubes and cook until browned on all sides.
- Pour in the tomato sauce, beef broth, and liver spread. Stir to combine.
- Season with paprika, chili flakes, salt, and pepper. Add the bay leaves. Cover and simmer for 1.5 to 2 hours or until the beef is tender.
- Add the potatoes, carrots, and bell peppers. Cook for an additional 15-20 minutes or until the vegetables are tender.
- Adjust the seasoning if needed. Serve hot and enjoy with steamed rice.
