Beef Enchiladas (nyama Yemombe Enchiladas)
Beef Enchiladas, also known as Nyama Yemombe Enchiladas, are a delicious fusion of Zimbabwean and Mexican flavors. This dish features tender beef, flavorful spices, and a rich tomato sauce, all wrapped in warm tortillas and baked to perfection.
Ingredients
- 1 pound beef, thinly sliced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1 cup tomato sauce
- 8 corn tortillas
- 1 cup shredded cheese
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- In a skillet, heat the cooking oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the beef slices to the skillet and cook until browned.
- Stir in the ground cumin, paprika, chili powder, and tomato sauce. Simmer for 10 minutes, then season with salt and pepper.
- Preheat the oven to 350°F (175°C).
- Warm the corn tortillas in a separate skillet or in the microwave.
- Place a spoonful of the beef mixture in the center of each tortilla, roll it up, and place seam-side down in a baking dish.
- Sprinkle the shredded cheese over the rolled tortillas.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve the beef enchiladas hot and enjoy!
