Beef Enchiladas (nyama Yemombe Enchiladas)

Ingredients

  • 1 pound beef, thinly sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1 cup tomato sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • 2 tablespoons cooking oil

Instructions

  1. In a skillet, heat the cooking oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the beef slices to the skillet and cook until browned.
  3. Stir in the ground cumin, paprika, chili powder, and tomato sauce. Simmer for 10 minutes, then season with salt and pepper.
  4. Preheat the oven to 350°F (175°C).
  5. Warm the corn tortillas in a separate skillet or in the microwave.
  6. Place a spoonful of the beef mixture in the center of each tortilla, roll it up, and place seam-side down in a baking dish.
  7. Sprinkle the shredded cheese over the rolled tortillas.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Serve the beef enchiladas hot and enjoy!
