Beef Hofan (Stir-Fried Flat Rice Noodles)

Ingredients
- 1 pound flat rice noodles
- 1/2 pound beef, thinly sliced
- 3 cloves garlic, minced
- 1 onion, sliced
- 2 cups bok choy, chopped
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 cup beef broth
Instructions
- Soak the flat rice noodles in hot water for 10 minutes, then drain and set aside.
- In a small bowl, mix together the soy sauce, oyster sauce, cornstarch, sugar, and black pepper. Set aside.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and onion, and stir-fry for 1 minute.
- Add the beef and stir-fry until it is no longer pink.
- Add the bok choy and stir-fry for another 2 minutes.
- Push the ingredients to the side of the wok, pour the beef broth in the middle, and bring it to a boil.
- Add the soaked rice noodles and the sauce mixture to the wok. Toss everything together and stir-fry for 3-5 minutes, or until the noodles are heated through and well-coated with the sauce.
- Transfer to a serving dish and serve hot.
