Beef Hofan (Stir-Fried Flat Rice Noodles)

Ingredients

  • 1 pound flat rice noodles
  • 1/2 pound beef, thinly sliced
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 2 cups bok choy, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup beef broth

Instructions

  1. Soak the flat rice noodles in hot water for 10 minutes, then drain and set aside.
  2. In a small bowl, mix together the soy sauce, oyster sauce, cornstarch, sugar, and black pepper. Set aside.
  3. Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and onion, and stir-fry for 1 minute.
  4. Add the beef and stir-fry until it is no longer pink.
  5. Add the bok choy and stir-fry for another 2 minutes.
  6. Push the ingredients to the side of the wok, pour the beef broth in the middle, and bring it to a boil.
  7. Add the soaked rice noodles and the sauce mixture to the wok. Toss everything together and stir-fry for 3-5 minutes, or until the noodles are heated through and well-coated with the sauce.
  8. Transfer to a serving dish and serve hot.
