Ingredients
- 1 lb beef, thinly sliced
- 1 lb wide rice noodles
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 2 cups bean sprouts
- 3 green onions, cut into 2-inch pieces
- 2 eggs, lightly beaten
- 1/4 cup dark soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon light soy sauce
- 1 tablespoon sugar
- 1/2 teaspoon white pepper
Instructions
- Soak the rice noodles in hot water for 10 minutes, then drain and set aside.
- In a small bowl, mix together the dark soy sauce, oyster sauce, light soy sauce, sugar, and white pepper to make the sauce.
- Heat 1 tablespoon of vegetable oil in a wok over high heat. Add the beef and stir-fry until it is no longer pink. Remove the beef from the wok and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the wok. Add the garlic and stir-fry until fragrant.
- Add the onion and bell pepper to the wok and stir-fry for 2-3 minutes.
- Push the vegetables to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until they are just set.
- Add the rice noodles, bean sprouts, and green onions to the wok. Pour the sauce over the noodles and toss everything together until well combined.
- Return the beef to the wok and stir-fry for another 2-3 minutes, until everything is heated through.
- Transfer the Beef Hor Fun to a serving platter and serve hot.
