Beef Hor Fun Extravaganza

Ingredients

  • 1 lb beef, thinly sliced
  • 1 lb wide rice noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 2 cups bean sprouts
  • 3 green onions, cut into 2-inch pieces
  • 2 eggs, lightly beaten
  • 1/4 cup dark soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon sugar
  • 1/2 teaspoon white pepper

Instructions

  1. Soak the rice noodles in hot water for 10 minutes, then drain and set aside.
  2. In a small bowl, mix together the dark soy sauce, oyster sauce, light soy sauce, sugar, and white pepper to make the sauce.
  3. Heat 1 tablespoon of vegetable oil in a wok over high heat. Add the beef and stir-fry until it is no longer pink. Remove the beef from the wok and set aside.
  4. Heat the remaining 1 tablespoon of vegetable oil in the wok. Add the garlic and stir-fry until fragrant.
  5. Add the onion and bell pepper to the wok and stir-fry for 2-3 minutes.
  6. Push the vegetables to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until they are just set.
  7. Add the rice noodles, bean sprouts, and green onions to the wok. Pour the sauce over the noodles and toss everything together until well combined.
  8. Return the beef to the wok and stir-fry for another 2-3 minutes, until everything is heated through.
  9. Transfer the Beef Hor Fun to a serving platter and serve hot.
