Beef In Spicy Sauce (ají De Carne)

Ingredients

  • 1 pound beef, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 ají amarillo peppers, seeded and finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup beef broth
  • 2 tablespoons chopped cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the beef and cook until browned. Remove the beef from the pan and set aside.
  2. In the same pan, add the onion and garlic. Sauté until the onion is translucent.
  3. Add the tomatoes, ají amarillo peppers, soy sauce, vinegar, cumin, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Return the beef to the pan and add the beef broth. Simmer for 45 minutes or until the beef is tender and the sauce has thickened.
  5. Garnish with chopped cilantro before serving.
