Ingredients

  • 1.5 lbs beef chuck, cut into cubes
  • 1 cup peanut butter
  • 1 eggplant, sliced
  • 1 bundle string beans, cut into 2-inch pieces
  • 1 banana heart, sliced
  • 1/2 cup ground roasted rice
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and sauté the garlic and onion until fragrant.
  2. Add the beef and cook until browned on all sides.
  3. Pour in the beef broth and bring to a boil. Reduce heat and simmer for 1.5 hours or until the beef is tender.
  4. Stir in the peanut butter and ground roasted rice. Simmer for an additional 15 minutes.
  5. Add the eggplant, string beans, and banana heart. Cook for another 10 minutes or until the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot with steamed rice.
