Beef Kare Kare
Beef kare kare is a traditional Filipino stew made with tender beef and a rich peanut sauce. This savory and creamy dish is perfect for family gatherings and special occasions.
Ingredients
- 1.5 lbs beef chuck, cut into cubes
- 1 cup peanut butter
- 1 eggplant, sliced
- 1 bundle string beans, cut into 2-inch pieces
- 1 banana heart, sliced
- 1/2 cup ground roasted rice
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 8 cups beef broth
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat and sauté the garlic and onion until fragrant.
- Add the beef and cook until browned on all sides.
- Pour in the beef broth and bring to a boil. Reduce heat and simmer for 1.5 hours or until the beef is tender.
- Stir in the peanut butter and ground roasted rice. Simmer for an additional 15 minutes.
- Add the eggplant, string beans, and banana heart. Cook for another 10 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
