Ingredients
- 2 lbs beef, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 scotch bonnet peppers, chopped
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 1 tbsp ground crayfish
- 1 tbsp ground cayenne pepper
- 6 cups beef stock
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
- Add the beef chunks and brown on all sides.
- Stir in the scotch bonnet peppers, tomatoes, bell pepper, ground crayfish, and cayenne pepper. Cook for 5 minutes.
- Pour in the beef stock and bring to a boil. Reduce heat and simmer for 45 minutes to 1 hour, or until the beef is tender.
- Season with salt and pepper to taste.
