Ingredients

  • 2 lbs beef, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 scotch bonnet peppers, chopped
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1 tbsp ground crayfish
  • 1 tbsp ground cayenne pepper
  • 6 cups beef stock
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
  2. Add the beef chunks and brown on all sides.
  3. Stir in the scotch bonnet peppers, tomatoes, bell pepper, ground crayfish, and cayenne pepper. Cook for 5 minutes.
  4. Pour in the beef stock and bring to a boil. Reduce heat and simmer for 45 minutes to 1 hour, or until the beef is tender.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
