Beef Quesadillas (nyama Yemombe Quesadillas)

Ingredients

  • 1 pound beef, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream (optional)

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat. Add the sliced beef, paprika, cumin, garlic powder, salt, and pepper. Cook for 5-7 minutes until the beef is browned and cooked through. Remove from heat and set aside.
  2. Place a tortilla on a clean surface and sprinkle 1/2 cup of shredded cheese evenly over the tortilla. Top with a quarter of the cooked beef, diced tomatoes, and cilantro. Fold the tortilla in half to cover the filling.
  3. Heat a clean skillet over medium heat and place the filled tortilla in the skillet. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  4. Slice the cooked quesadillas into wedges and serve with a dollop of sour cream if desired.
