Beef Rendang Delight

Ingredients

  • 1 kg beef, cut into cubes
  • 4 cups coconut milk
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 lemongrass stalks, bruised
  • 5 kaffir lime leaves
  • 1-inch galangal, sliced
  • 1-inch ginger, sliced
  • 3 red chilies, sliced
  • 1 tbsp tamarind paste
  • 2 tbsp brown sugar
  • Salt to taste

Instructions

  1. In a large pot, combine the beef, coconut milk, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and red chilies.
  2. Place the pot over medium heat and bring the mixture to a boil. Then, reduce the heat to low and let it simmer for 2 hours, stirring occasionally.
  3. Add the tamarind paste, brown sugar, and salt. Continue to simmer for another hour or until the beef is tender and the sauce has thickened.
  4. Once done, remove from heat and serve the Beef Rendang hot with steamed rice.
