Beef Rendang, also known as Rendang Daging, is a traditional Bruneian dish that features tender beef simmered in a rich and aromatic coconut milk sauce. This flavorful dish is a staple in Bruneian cuisine and is perfect for special occasions or family gatherings.
Ingredients
- 2 lbs beef, cut into cubes
- 4 cups coconut milk
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 3 stalks lemongrass, bruised
- 5 kaffir lime leaves
- 1-inch galangal, sliced
- 1-inch ginger, sliced
- 3 tbsp tamarind paste
- 2 tbsp palm sugar
- Salt to taste
Instructions
- In a large pot, combine the beef, coconut milk, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and tamarind paste.
- Place the pot over medium heat and bring the mixture to a simmer. Reduce the heat to low and let it simmer for 2 hours, stirring occasionally.
- Add the palm sugar and salt to the pot and continue to simmer for another hour, or until the beef is tender and the sauce has thickened.
- Once the beef is tender, remove the pot from the heat and let it rest for 10 minutes before serving.
