Ingredients

  • 2 lbs beef, cut into cubes
  • 4 cups coconut milk
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 stalks lemongrass, bruised
  • 5 kaffir lime leaves
  • 1-inch galangal, sliced
  • 1-inch ginger, sliced
  • 3 tbsp tamarind paste
  • 2 tbsp palm sugar
  • Salt to taste

Instructions

  1. In a large pot, combine the beef, coconut milk, shallots, garlic, lemongrass, kaffir lime leaves, galangal, ginger, and tamarind paste.
  2. Place the pot over medium heat and bring the mixture to a simmer. Reduce the heat to low and let it simmer for 2 hours, stirring occasionally.
  3. Add the palm sugar and salt to the pot and continue to simmer for another hour, or until the beef is tender and the sauce has thickened.
  4. Once the beef is tender, remove the pot from the heat and let it rest for 10 minutes before serving.
