Beef Roulades (rindsrouladen)

Ingredients

  • 4 slices of beef (about 1/4 inch thick)
  • 4 tablespoons Dijon mustard
  • 8 slices of bacon
  • 4 dill pickles, sliced lengthwise
  • 1 large onion, finely chopped
  • 2 tablespoons vegetable oil
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Spread 1 tablespoon of mustard on each slice of beef.
  2. Place 2 slices of bacon and 2 pickle slices on top of each beef slice.
  3. Sprinkle chopped onions over the bacon and pickles.
  4. Roll up the beef slices and secure with toothpicks.
  5. Heat vegetable oil in a large skillet over medium heat.
  6. Brown the beef roulades on all sides.
  7. Pour in the beef broth and season with salt and pepper.
  8. Cover and simmer for 1 hour, until the beef is tender.
  9. Remove the toothpicks before serving.
