Beef Stew In Red Wine (boeuf Bourguignon)

Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 6 slices bacon, chopped
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 3 garlic cloves, minced
- 1 1/2 cups red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 1/2 pound pearl onions
- 1/2 pound mushrooms, quartered
- 2 tablespoons butter
- 2 tablespoons chopped fresh parsley
Instructions
- In a large bowl, toss the beef cubes with the flour until evenly coated.
- In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
- Working in batches, brown the beef cubes in the bacon drippings. Remove the beef and set aside.
- Add the olive oil to the pot and sauté the chopped onion, carrots, and garlic until softened.
- Return the beef and bacon to the pot. Pour in the red wine and beef broth. Stir in the tomato paste, thyme, bay leaves, salt, and pepper.
- Cover and simmer for 2 hours, stirring occasionally.
- In a separate pan, sauté the pearl onions and mushrooms in butter until golden. Add them to the stew and simmer for an additional 30 minutes.
- Remove the bay leaves and season the stew with salt and pepper to taste. Sprinkle with chopped parsley before serving.
