Beef Stew (Swabian Gaisburger Marsch) is a traditional dish from the Swabian region of Germany. This hearty stew is made with tender beef, potatoes, and topped with spaetzle, onions, and gravy.
Ingredients
- 2 lbs beef stew meat, cubed
- 4 large potatoes, peeled and cubed
- 1 onion, chopped
- 1 cup flour
- 2 eggs
- 1/4 cup water
- 2 tbsp vegetable oil
- 4 cups beef broth
- 1/2 cup red wine
- 1/4 cup butter
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown on all sides.
- Add the chopped onion and cook until translucent.
- Pour in the beef broth and red wine. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Meanwhile, prepare the spaetzle by mixing the flour, eggs, and water to form a thick batter. Push the batter through a spaetzle maker or colander into boiling water. Cook for 2-3 minutes, then drain.
- Add the cubed potatoes to the stew and continue simmering for an additional 30 minutes, or until the potatoes are tender.
- In a separate pan, melt the butter and sauté the cooked spaetzle until lightly browned.
- To serve, place a portion of spaetzle in a bowl, ladle the beef stew over the top, and garnish with sautéed onions.
