Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 large potatoes, peeled and cubed
  • 1 onion, chopped
  • 1 cup flour
  • 2 eggs
  • 1/4 cup water
  • 2 tbsp vegetable oil
  • 4 cups beef broth
  • 1/2 cup red wine
  • 1/4 cup butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown on all sides.
  2. Add the chopped onion and cook until translucent.
  3. Pour in the beef broth and red wine. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  4. Meanwhile, prepare the spaetzle by mixing the flour, eggs, and water to form a thick batter. Push the batter through a spaetzle maker or colander into boiling water. Cook for 2-3 minutes, then drain.
  5. Add the cubed potatoes to the stew and continue simmering for an additional 30 minutes, or until the potatoes are tender.
  6. In a separate pan, melt the butter and sauté the cooked spaetzle until lightly browned.
  7. To serve, place a portion of spaetzle in a bowl, ladle the beef stew over the top, and garnish with sautéed onions.
